Citrus marinated chicken

Ingredients

For 2 persons :
For citrus marinated chicken :
2 organic chicken thighs – 2 bloody oranges – 1 citrus bergamote organic – 4 shallots halved lengthwise in 4 parts – 1 clove garlic – minced fresh parsley – 1 tablespoon of dried grapes, of soybean and one of olive oil – salt – pepper
For semolina:
1 glass of semolia of durum wheat – 1 tablespoon of olive oil – 1 large pinch of: paprika, a mix of 4 spicies, ginger, curcuma, pepper – 2 glass of quivering water

Preparation

  • Squeeze the citrus fruit, add the garlic, cut shallots, dried grapes, soy sauce and olive oil. Season with salt and pepper.
  • Place the mixture to chicken legs in an ovenproof pan. Leave to marinate in the fridge for one hour. Even better: overnight.
  • Then, to heat oil in a skillet over medium heat. To grasp the chicken legs without turning over for 5 minutes. Let the cooking continue for ten minutes, next turning regularly. This step will help to color the meat and to crisp the chicken skin.

Cooking

  • Preheat the oven to190 degrees and place the skilled with colored meat and marinate during 55 minutes.
  • Served with semolia and parsley.
