SeMi-cooked of salmon accompanied with its summer vegetables

This recipe will get married perfectly to our vintage champagne Legend range1999.

Ingredients

For 6 people:

6 beautiful pavements of organic salmon (approximately 1kg)
6 carrots fade
6 asparaguses
6 radish whites
6 small turnips
G of mangetout peas
6 artichokes poivrade
Clove of garlic
1 dl of reduced juice of shellfish
1 dl of single cream
5 cl of champagne
1 dl of olive oil
Salt

Preparation

Peel, wash vegetables, sweat them in the olive oil in a small rondo with the unpeeled garlic, under cover. (Count approximately 15 minutes).

Make reduce the cremated juice of shellfish and at the last moment, add the champagne.

Cooking

Cook in the unilateral the salmon a la plancha or in a frying pan with a dash of olive oil (3 minutes on each side maximum).
